No need to wait for cheat day because these tasty tubers are packed with vitamins A, K, calcium, magnesium, and iron. Sweet potatoes are also rich in fiber, antioxidants, and known to improve insulin sensitivity. So enjoy the crispy deliciousness and make enough to share!
2 pounds organic sweet potatoes
2 tablespoons olive oil
A generous few pinches of sea salt
Fresh ground black pepper
Optional spices include garlic, cayenne, paprika, or cinnamon to taste
*To cook evenly, sweet potatoes fries should be even in thickness, about 1/4 inch wide and 3 inches long. Baking time will vary based on the size and thickness.
