BAKED SWEET POTATO FRIES

​Simple, sweet, and unbelievably good! These Baked Sweet Potato Fries won’t last long in the kitchen! Eat them plain, add your favorite spices, or load them up with healthy fixin's! No need to wait for cheat day because these tasty tubers are packed with vitamins A, K, calcium, magnesium, and iron. Sweet potatoes are also rich in fiber, antioxidants, and known to improve insulin sensitivity. So enjoy the crispy deliciousness and make enough to share!
INGREDIENTS
2 pounds organic sweet potatoes
2 tablespoons olive oil
A generous few pinches of sea salt
Fresh ground black pepper
Optional spices include garlic, cayenne, paprika, or cinnamon to taste

DIRECTIONS
  1. Preheat oven to 400°F.
  2. Line a baking sheet with parchment paper, set aside.
  3. Cut off both ends of the sweet potatoes, slice in half (lengthwise), and then cut into fries*.
  4. In a large mixing bowl combine sweet potatoes, olive oil, sea salt, pepper and any spices. Toss to coat sweet potatoes evenly.
  5. Spread potatoes onto the baking sheet in a single layer (do not crowd).
  6. Bake 30-40 minutes until brown and crispy, flip fries half way through baking.
  7. Serve hot.

*To cook evenly, sweet potatoes fries should be even in thickness, about 1/4 inch wide and 3 inches long. Baking time will vary based on the size and thickness.
